Ingredients:
club soda
2 teaspoons superfine cane sugar (C&H makes superfine cane sugar)
6 or 7 fresh mint leaves, divided
2 teaspoons lime juice
2 ounces Bacardi rum
Ice cubes
Procedure:
Pour a splash of club soda in the bottom of a highball glass (this is the tall and skinny cocktail glass). Add the sugar and 4 or 5 mint leaves; muddle the sugar Into the mint. (If you don't have a muddler, you can use a wooden spoon.) Add the lime Juice and rum to the glass and give it a quick stir. Add enough ice to fill the glass halfway and then top with more club soda; stir to mix well. Garnish the drink with another mint leaf or 2.
