Continental Airlines: Maple-Glazed Chicken with Thyme and Sweet Potato Hash Recipe - Chef Robin Paula

Ingredients:
6 leg-thigh and breast-wing chicken quarters, skin on
1 cup olive oil
1 bunch fresh thyme
2 tsp. salt
2 tsp. pepper
4 sweet potatoes, diced
2 large white onions, diced
¾ cup maple syrup

Procedure:
1. In the refrigerator, marinate chicken for 2 hours with ½ cup olive oil, half of the thyme bunch, ¼ tsp.
salt, and ¼ tsp. pepper.
2. Preheat oven to 375°F.
3. Mix together sweet potatoes and onions with remaining olive oil, thyme, salt, and pepper; place into
a 2-inch or deeper roasting pan and place chicken across top. Sprinkle maple syrup over chicken, onions,
and potatoes.
4. Bake 40 to 45 minutes, or until the internal temperature of the chicken reaches 165 degrees.
5. To serve, place chicken across bed of sweet potatoes and onions. Drizzle pan drippings around edge
of plate. Garnish with a sprig of thyme.
