Martini Italian Bistro: Chicken Florentine Recipe


Chicken Florentine Ingredients:
3 / 3oz chicken breast
2 oz Cremini mushrooms sliced
1/2 oz sun dried tomatoes
1 oz spinach
1 teaspoon chopped garlic
1 tablespoon garlic butter
salt and pepper to taste
1½ cups Parmesan whipped potatoes (standard mashed potatoes)

Chicken Procedure:
Saute chicken in oil until browned on both sides.
Add mushrooms, sun dried tomatoes, and spinach.
Add Alfredo sauce and garlic butter
Allow this to reduce by 1/4 and thicken.
Plate over warm Parmesan whipped potatoes.
Garnish with Parmesan and fresh chopped parsley.
