4- 8 ounce skinned and deboned chicken breast
1/4 cup chopped macadamia nuts
3 cups of panko (Japanese breadcrumbs)
1/4 cups flour
1/2 cup milk
3 whole eggs
Salt and Pepper to taste
Procedure:
Salt and pepper the chicken breasts and set aside.
In a mixing bowl combine milk and eggs and mix well.In another mixing bowl combine the chopped nuts and panko and mix well.
Take the seasoned chicken and lightly flour the chicken. Dip the chicken into the egg and milk mixture then put into the mixture of panko.
The chicken should be well coated in the panko mixture.
Heat a large size sauté pan with oil. Once oil is hot add the chicken and sauté on both sides until golden brown.
Transfer the pan to a 350 degree oven and continue cooking for and additional 12 minuets. Or until chicken is done.
Shoyu Cream Sauce (for the Chicken) Ingredients:
2 cups heavy whipping cream
1/4 cup soy sauce
2 tbsp cornstarch
2 tbsp water
Shoyu Cream Sauce (for the Chicken) Procedure:
In a saucepan, place the heavy cream and soy sauce and bring to a boil; turn down to a simmer. In a separate bowl, mix the cornstarch with the water and stir into a paste. Add the cornstarch paste into the cream and soy sauce and stir until the mixture thickens.
White Cheddar Mashed Potatoes Ingredients:
2 1/2 lbs potatoes, peeled and cut into chunks
3 teaspoons salt (divided)
1/4 cup unsalted butter, at room temperature
1/4 cup sour cream
1/4 teaspoon white pepper
1 1/2 cups white cheddar cheese, grated
1/2 cup whipping cream
White Cheddar Mashed Potatoes Procedure:
Cover the potatoes with water in a large saucepan and add 2 tsp salt. Bring to a boil and cook until potatoes are tender, about 20 minutes (check with fork). Drain well.
Place the hot potatoes in a large mixer bowl. Using an electric mixer, beat until smooth. Add the butter and sour cream and whip for 20-30 seconds. Add the remaining 1 tsp salt, white pepper, and cheddar. Whip to incorporate. Add the cream and whip until the potatoes are smooth.
