Chef's Notes:
You can substitute 1/4 cup Classic Caesar Dressing or Classic Ranch Dressing for the mayo and lemon juice.
Ingredients:
¼ cup Mayonnaise
1 Tbsp. lemon juice
25 Ritz Crackers, finely crushed (about 1 cup)
¼ cup Grated Parmesan Cheese
2 tsp. dried basil leaves
4 small boneless skinless chicken breasts (1 lb.)
Procedure:
HEAT oven to 400°F.
MIX mayo and lemon juice in medium bowl. Combine cracker crumbs, cheese and basil in separate bowl.
DIP chicken, 1 breast at a time, in mayo mixture, then roll in crumb mixture until evenly coated. Place on baking sheet sprayed with cooking spray.
BAKE 20 min. or until done (165°F).
