Four Seasons Resort - Bali Jimbaran Bay: Passion Fruit Mojito Popsicles

Ingredients:
These popsicles have dominant flavors of fresh passion fruit, mint, coconut, and lemon.

Ingredients: 
3 tbsp (45 ml) Passion Fruit Mix (see below)
1/3 cup plus 5 tsp (100 ml) Mojito Base (see below)
4 tsp (20 ml) soda water
1 fresh passion fruit
1/3 oz (10 g) sliced young coconut
1 tbsp (15 ml) lemon zest
Sprigs of fresh mint

Ingredients for Passion Fruit Mix*:
4 cups (1 L) passion fruit puree
2½ cups (625 ml) water
2 cups (500 ml) passion fruit syrup, preferably Giffard brand

Passion Fruit Mix Procedure:
1. Mix together all ingredients and freeze in 3 tbsp (45 ml) packets.
*This will make extra packets for future use.

Ingredients for Mojito Base*:
1 cup plus 3 tbsp (300 ml) fresh lemon juice, fresh
1 cup plus 3 tbsp (300 ml) Myer’s dark rum
1 cup plus 3 tbsp (300 ml) mint syrup, preferably Giffard brand
1 2/3 cups (400 ml) Bacardi white rum

Mojito Base Procedure:
1. Mix together all ingredients and freeze in 1/3 cup plus 5 tsp (100 ml) packets.
*This will make extra packets for future use.

Method for assembling:
1. In a blender, combine two packets each of frozen Passion Fruit Mix and Mojito base. Once blended, add soda water and stir.

2. Cut open the fresh passion fruit, and put the seeds in the two popsicle moulds. Fill half the popsicle moulds with the passion fruit and mojito mixture and put them in freezer.

3. After 15-20 minutes, when it’s slightly frozen, neatly arrange the young sliced coconuts, fresh mint leaves and lemon zest in the moulds.

4. Fill up the remaining popsicle moulds with the passion fruit and mojito mixture.

5. Freeze well. Once frozen, remove popsicles from moulds and serve immediately.
