Yield: 8 servings
Ingredients:
1 each European cucumber, 8-oz, peeled
Kosher salt as needed
White pepper as needed
¾ Cup Mediterranean-style yogurt
1 Tbsp Lemon juice, fresh
1 each Garlic clove, finely chopped
Procedure:
Roughly chop cucumber and place in bowl of a food processor with pinch of salt. Process until very fine. Transfer to cheesecloth-lined colander and drain over bowl for 30 minutes. Wring cucumber out in cheesecloth to extract remaining juices. Discard cloth and contents. Reserve seasoned juices. Place yogurt in small stainless steel mixing bowl. Slowly whisk in cucumber and lemon juices. Add garlic and mix well. Season with salt and freshly ground white pepper and reserve.
