Four Seasons Hotel - Las Vegas: Homemade Pesto


Serves: 4

Ingredients:
1½ cups (355 ml) fresh basil
3/4 cup (175 ml) organic extra virgin olive oil, cold pressed
4 tbsp (60 ml) sparkling water with 2 ice cubes
2 tbsp (30 ml) Parmesan cheese
1 tbsp (15 ml) Roasted pinenuts
2 cloves garlic, peeled
Pinch of Kosher salt

Procedure:
1. For best results (and freshest green colour), chill all ingredients — including the blender — for at least 4 – 6 hours before making.

2. Combine all ingredients and blend for about 30 seconds maximum, until the mixture reaches a smooth consistency.
