Oysters Casino Recipe - Chef Comella


Makes: 14

Ingredients:
2 cups dry bread crumbs
1/2 cup grated Parmesan cheese
1/2 cup finely chopped onion
1-1/2 tablespoons chopped parsley
1/4 cup lemon juice
1/3 cup white wine
1/3 teaspoon sweet basil
1/4 teaspoon oregano
Dash black pepper
1 pint chucked oysters
7 slices bacon

Procedure:
Mix all ingredients, but oysters & bacon for dressing. Add enough liquor drained from oysters to moisten. In 14 aluminum shells (the kind used for baked mashed potatoes) or real shells, place about 1 tbsp. of dressing.

Pick over oysters for shell fragments. Place 2 oysters in each shell. Top with more dressing, then with a half-slice of bacon cut in two pieces. Bake at 400 degrees for 15 minutes.
