Kathy’s Pasta: Gnocchi Recipe


Ingredients:
2 lb. potatoes
2 eggs
2 3/4 c. flour
1/2 tsp. salt

Procedure:
Peel and cube potatoes and boil. Drain and toss over low heat until dry. Mash until smooth. Beat in 2 eggs, add salt. Blend in flour to make soft dough adding another 1/4 cup flour if necessary to keep from sticking. Take a 3 inch ball and roll into a 1/2 inch tube, cut into 1 inch pieces and roll with a fork. Cook in salted boiling water a few pieces at a time. When they rise to the surface, they are done. Keep warm in buttered dish in oven. Serve with Italian sauce and grated parmesan.
