Serves 8
Ingredients:
175g mixed berries (fresh or frozen)
100g sugar
350ml water
zest and juice of half a lemon
Procedure:
1. Purée the berries.
2. Combine the sugar, water, lemon zest and juice and prepare a simple syrup.
3. Add the purée to the syrup and let the mixture cool completely.
4. Churn to make a sorbet, then keep frozen until needed.
