Taco Punk: Homemade Tortillas Recipe


Ingredients:
8 oz Masa Flour
6 oz Corn FLOUR (not cornmeal)
4 oz bread flour
2c  HOT water
2T. corn oil or other desired fat
1 T. Kosher Salt

Procedure:
Combine all of the dry ingredients in a medium size mixing bowl. Add the oil and mix. Gradually add the hot water. Knead for about 3 minutes. Cover and allow to cool.

When cool, portion the balls to desired size. Heat a griddle to 350 F. When it begins to smoke, coat with a layer of oil. Using a tortilla press or two plates lined with sandwich bags, press to the desired thickness and place immediately on the griddle. When the dough begins to puff (about 30 seconds) flip and cook for an equal amount of time. Remove from grill and eat immediately.
