Ingredients:
Cheese Sauce:¼ cup unsalted butter
¼ cup all-purpose flour
6 oz. any beer
½ cup milk
1 cup heavy cream
1 tsp. tabasco
1 tsp. dijon mustard
1 cup shredded cheddar
Procedure:
Cheese Sauce:
Melt the butter and add the flour to make a roux.
Add the beer and reduce for 4 minutes.
Add the remaining ingredients except for the cheese.
Bring to a simmer.
Slowly stir in the cheese and set aside.
