Philly Cheesesteak - Chef Michael Schulson

Other: flour, beer, olive oil, Italian heroes
Cooking Method: stove top, grill

Ingredients: 
Cheese Sauce:
¼ cup unsalted butter
¼ cup all-purpose flour
6 oz. any beer
½ cup milk
1 cup heavy cream
1 tsp. tabasco
1 tsp. dijon mustard
1 cup shredded cheddar

Steaks:
2 rib eye steaks
1 tsp. garlic powder
1 tsp. onion powder
1 tsp. salt
½ cup olive oil

Sandwich:
1 cup shaved iceberg lettuce
1 tomato, sliced thin
1 Vidalia onion, sliced thin
4 Italian heroes


Procedure:
Cheese Sauce:
Melt the butter and add the flour to make a roux.
Add the beer and reduce for 4 minutes.
Add the remaining ingredients except for the cheese.
Bring to a simmer.
Slowly stir in the cheese and set aside.

Steaks:
Marinade the steaks with all ingredients for 2 hours or longer.
Grill until medium rare and let it rest for 4 minutes.
Slice paper-thin.

Sandwich:
Warm the bread on the grill.
Open and fill with the sliced steak.
Top with the cheese sauce.
Garnish with the lettuce, tomato and onion.
