Prairie View Cafe: Broccoli Pasta Carbonara Recipe - Chef Graham Smith

Ingredients:
1/2 tsp. extra virgin olive oil
1 cup sauteed mushrooms
2 oz. turkey bacon
8 Tbsp. caramelized onions
4 cup penne pasta, cooked
2 cup blanched broccoli
1 cup Alfredo sauce
4 tsp. Parmesan cheese, shredded
1 cup vegetable stock

Procedure:
Heat pan over medium high heat. Mist the pan with olive oil.
Add the mushrooms, turkey bacon and onions and cook for 30 seconds to a minute --just to heat through.
Add in the pasta, broccoli, vegetable stock and Alfredo sauce.
Allow to simmer. Sprinkle with shredded Parmesan cheese.
