Lemongrass Marinated Laughing Bird Shrimp with Green Papaya Salad and Sweet Soy Recipe



Lemongrass Paste Ingredients: 
½ cup chopped lemongrass
2 garlic cloves
1 shallot
½ bunch of cilantro
tsp ginger
2 jalapeños
½ canola oil

Procedure:
Place all ingredients except oil in the food processor. Puree and add oil as pureeing.

Sweet Soy Ingredients: 
2 c sugar
1 jalapeño
tsp ginger
3 star anise
2 garlic clove
½ c water
1 c soy sauce

Sweet Soy Procedure:
Place all ingredients except soy sauce in sauce pan without stirring. Cook on medium heat until sugar is caramelized. Add soy sauce and mix with the sugar concoction. Continue to cook on low for 5 minutes. Strain and cool.

Green Papaya Salad: 
1 unripe papaya, julienned
1 jalapeno, julienned
½ red pepper, julienned
½ red onion, sliced
1 tsp fish sauce
½ tsp chopped thai chile
¼ c lime juice
tsp sugar

Green Papaya Procedure:
Mix all ingredients and refrigerate.

Shrimp: 
20 Laughing Bird shrimp IQF 31-40 tossed with lemongrass paste, sautéed and chilled

Presentation: 
Divide papaya salad into four plates.
Divide five shrimp around the salad.
Drizzle plate with sweet soy.
