Ingredients:
4 (8-ounce) boneless duck breasts

Duck Preparation
1. Pre-heat oven to 400˚F
2. Score the duck skin in a criss-cross manner
3. Heat heavy pan or grill pan
4. Grill duck skin side down until fat has rendered and skin browns, approximately 3 minutes
5. Turn and grill the other side 3 minutes
6. Brush with glaze and finish cooking in a hot oven, add glaze as needed
7. Bake until the internal temperature reaches 130˚F, approximately 7-10 minutes
8. Remove from heat, cover with foil and let rest 10 minutes before serving
