Continental Airlines: Duck Marinade Recipe - Chef Gerry McLoughlin

Duck Marinade Ingredients:
4 8-ounce boneless duck breasts
¼ cup cooking oil
2 tablespoons ginger, minced
1 tablespoon shallot, minced
2 tablespoons dark soy sauce
¼ cup hoisin sauce
¼ teaspoon five spice powder

Duck Marinade Procedure:
1. Heat oil in small sauce pan
2. Add ginger and shallot and stir for 10 seconds
3. Add remaining ingredients and stir for 10 to 20 seconds
4. Remove from heat and set aside to cool
5. Brush all sides of the duck with the cooled marinade
6. Refrigerate in sealed plastic bag for four hours
