Ingredients:
4 (4oz) Mahi-mahi steaks butterflied
3 sprigs marjoram chopped
3 sprigs thyme chopped
3 sprigs dill chopped
6 oz seasoned flour
1 lime
Salt to taste
white pepper to taste
Olive oil for shallow frying
Procedure:
1. marinate mahi-mahi steaks in chopped herbs, lime juice, white wine, salt and pepper for 25 minutes.
2. Heat olive oil in a frying pan. Lightly dredge steaks in seasoned flour. When oil is hot gently placed floured steaks in the pan. Fry on each side 3 to 4 minutes or until golden brown.
3. Drain on absorbent paper and serve hot with lime wedges.
