North Main Annex Cafe: Sweet Potato Hot Cakes with Honey Pecan Glaze Topping

Hot Cake Ingredients:
2 ¾ cups of flour
1 tsp. salt
5 ½ tbsp. sugar
1 tbsp. baking powder
3 cups buttermilk
3 large eggs
2 tbsp. butter, melted
1 large sweet potato, roasted and cooled
2 tbps. honey
1 tsp. ground cinnamon
½ tsp. ground nutmeg

Hot Cake Procedure:
Combine flour, salt, sugar, baking soda, and baking powder. In a separate bowl, whisk together the buttermilk, eggs, and melted butter, and then add this to the dry mixture. Peel and mash sweet potato, place it in a bowl, add the honey, cinnamon, and nutmeg and mix well.  Add this sweet potato mixture to pancake batter. Let batter stand for at least 1 hour. Heat a skillet over medium heat. Add ladleful of batter and cook until golden brown on each side

Honey Pecan Glaze Topping Ingredients:
1 cup chopped pecans
½  tbsp. butter
½ tbps. honey

Honey Pecan Glaze Topping Procedure:
Heat skillet over a medium heat.  Add all ingredients and cook until pecans are lightly brown and caramelized, about 8 minutes. Pour over hot cakes.
