Zabar’s: French Onion Soup


Ingredients:
6 Tablespoons unsalted butter
4 cups thinly sliced yellow onion
4 - 10.5 ounce cans of beef broth (42 oz total)
2 Tablespoons of sherry
1 teaspoon of dried thyme
Salt
Black Pepper
4 slices of toasted French bread
2 cups of shredded Swiss cheese
1 Tablespoon of Parmesan cheese

Procedure:
Melt the butter in a large pot over medium heat. Add the onions and stir until they are translucent. Do not brown the onions.

Add the beef broth, sherry, and thyme. Season to taste with salt and pepper. Reduce heat and simmer for about 30 minutes.

Meanwhile, heat the broiler.

Ladle the soup into broiler-safe bowls and place one slice of toasted French bread on top of each serving. Pile on the shredded cheddar and finish with 1 Tablespoon of Parmesan cheese. Place bowls under broiler and heat until cheese melts and begins to bubble and slightly browns.
