Ingredients:
1 lb. 21/25 Shrimp (cut in half)
2 oz. Diced Carrots
2 oz. Diced Celery
4 oz . Diced White Onions (halved)
2 Lemons (cut in half)
3 oz. Diced Tomatoes
¼ cup Fresh Squeezed Lime Juice
¼ cup V8 Tomato Juice
1 tsp. Worcestershire Sauce
1 tsp. Tabasco Sauce
1 oz. Chopped Cilantro
2 oz. Diced Avocados
Salt and Pepper to taste
Procedure:
In a pot with boiling water add the shrimp, carrots, celery, half the diced onions, lemons and salt and cook for 3 minutes.
Cool it off with iced water then separate the shrimp, clean and cut them in half.
In a mixing bowl, mix shrimp, tomatoes, lime juice, v8 tomato juice, 2 oz onions, tabasco sauce, worcestershire sauce and cilantro. Arrange in a dish then garnished with the avocados and serve with crackers.
