Ingredients:
16 ounces pork
4 radishes
1/4 cabbage
1 bunch of cilantro
2 tablespoon oil
8 flour/corn tortillas (6 inch) each
1 cup mayonnaise
1 chipotle
1 tomato
Procedure:
1. Season pork with salt, pepper, and oil. Sear pork all the way around in a hot skillet, about two minutes on each side.
2. Using a crockpot, add about 1/2 cup of water into the crockpot with pork. Cook for bout 6 hours. Afterwards, the pork pulls apart easily and nicely; it should appear to be stringy when done.
3. Thinly slice radish into sticks, shred the cabbage thinly, and chop cilantro. Next, mix all fresh ingredients together with a touch of seasoning (oil, salt, and pepper).
4. In a food processor, purée mayonnaise, tomato and chile (add more chipotles if desired).
5. Warm tortillas, spread a little chile mayonnaise, top with a little of the pork (make sure the pork is still hot), and finally, top with radish slaw.
