Black Bean Relish Recipe

Black Bean Relish Ingredients:
5½ pounds canned black beans, rinsed and drained
1 large red onion, diced
1½ quarts thawed frozen corn
1½ cups drained and chopped roasted red peppers
½ cup chopped fresh cilantro leaves
¼ cup finely chopped jalapeño peppers
2 tablespoons minced garlic cloves
¾ cup distilled white vinegar
¾ cup extra virgin olive oil
¾ cup fresh lime juice
6 medium avocados, peeled, pitted and diced
Kosher salt and ground black
pepper to taste
Black Bean Relish Procedure:
In large bowl, combine beans, onion, corn, red peppers, cilantro, jalapeños and garlic.
In medium bowl, combine vinegar, oil and lime juice.
Pour vinegar mixture over bean mixture and toss to combine; fold in avocado, salt and pepper.
Cover and refrigerate.
