Ketchum Grill: Turkish Lamb Kebab


Ingredients:
5 pounds ground lamb
3 shallots diced
1/2 cup currants
1/2 cup pine nuts
1 tablespoon chopped garlic
Salt
3 tablespoons ground cinnamon
1/2 tablespoon ground cloves
1/2 tablespoon fenugreek or fennel seed

Procedure:
Mix all together. Shape onto skewers and grill. Serve with flat bread, bib lettuce, couscous, chutney and yogurt
