El Pollo Loco: Salsa Recipe - Todd Wilbur


Makes 1 cup
Cook Time: 10 minutes

Ingredients:
2 medium tomatoes, quartered
½ fresh jalapeno pepper, stem and seeds removed
2 leaves fresh cilantro
¼ teaspoon salt

Notes:
Along with your order from this 250-unit Western U.S. chain, comes a delicious, yet simple to clone, fat-free salsa. If you don’t have a food processor, never fear. You can also make the salsa by hand with a large, sharp knife and some steady-handed, energetic, calorie-burning mincing action. Keep your head down, legs slightly spread, and watch the fingers. You don’t want the salsa too red.

Procedure:
1. Combine all the ingredients in a food processor. Pulse 3 to 5 times on low speed until the vegetables are well chopped. Be careful that you don’t over-chop and puree the ingredients. Pour everything, including the liquid, into a medium bowl.
2. Cover and chill for several hours.
