Celebrity Cruises: Roasted Pumpkin Spice Soup with Raisins and Cognac Cream Recipe


Serves: 6

Ingredients:
1/4 cup unsalted butter
2 medium yellow onions
2 teaspoons garlic cloves (finely chopped)
1/8 teaspoon red pepper (crushed)
2 teaspoons Chinese five-spice powder
1/2 teaspoon coriander (ground)
Pinch ground cayenne pepper (if desired)
6 cups roasted pumpkin (chopped)
5 cups chicken broth (or vegetable broth for vegetarian option)
1/2 cup brown sugar (packed)
2 cups whole milk
2 cups heavy whipped cream
1 teaspoon sea salt (if desired)
1 cup dark raisins
6 ounces cognac

Pumpkin Soup Procedure:
Melt butter in 4-quart saucepan over medium to high heat. Add onions and garlic and cook about 4 minutes until soft, stirring often. Add spices and stir for 1 minute more.

Add pumpkin and chicken broth; blend well. Heat to boiling; reduce heat. Simmer for 12 minutes.

Transfer soup in bathes to a blender or food processor. Cover tightly and blend until smooth. Return soup to saucepan.

With soup on low heat, add brown sugar, and mix. Slowly add milk while stirring to incorporate. Add 1/4 cup of the cream. Adjust seasoning to taste. If too spicy, add more cream. Add salt.

Soak the raisins in half a cup of warm water mixed with 3 ounces of the cognac for 10 minutes; drain. Mix the remaining heavy cream with remaining cognac, and whisk until stiff.

Place the soup in serving bowls and garnish each with raisins and a quenelle of the cognac cream.
