Blackberry Upside-Down Cake Recipe - Chef Lou


Ingredients:
1/4 cup brown sugar
2 tablespoons butter
3 cups blackberries
1/2 cup butter
1¾ cup sugar
2 eggs
1½ cup flour
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon vanilla

Procedure:
Preheat oven to 350 degrees. Heat the brown sugar and 2 Tbsp. butter in a 9-inch iron skillet over medium heat. Add in the berries and cook, stirring until bubbly. Add 3/4 cup of the sugar to the pan and crush the berries slightly. Cook for about 5 minutes, and then remove from heat and set aside.
Cream 1/2 cup butter and remaining sugar until light. Blend in the eggs. Mix flour, baking powder and salt together and add alternately with milk to the creamed butter/sugar mixture. Stir in the vanilla.
Pour batter over cooked fruit in pan and bake for 35 minutes. When the pan has cooled slightly, run knife around edge of pan and turn onto a cutting board. Garnish with whipped cream.
