Perch and Cheese Quickie Recipe - Chef Comella


Ingredients:
Butterflied perch
Salt & pepper
Sliced processed cheese
Milk

Procedure:
Season perch inside with salt & pepper. Fold over, skin-side out. (This prevents drying during cooking.) Place in heavy, oven-going skillet. Place a slice of cheese atop each fish. Pour in milk about 1/4 inch deep. Cover. Cook in 400 degree oven for 15 minutes. Or cook on top of range oven for
10 minutes. Place in broiler for about 5 minutes. Garnish with lemon & parsley. Delicious on crackers, French bread or toast!
