Main Street Cafe & Pub: Blackened Shrimp & Cheese Grits Recipe

Serves: 10-12

Ingredients:
2 lb. (21-25) peeled & deveined shrimp
8 c. lobster stock
8 c. water
2 pats butter
1 Tbsp. fresh garlic
1 Tbsp. six pepper blend
4 c. stone ground grits
1/2 c. heavy cream (40%)
1 c. diced gruyere cheese
Salt to taste

Procedure:
Bring lobster stock and water to a boil with butter, garlic and six pepper blend. Add grits and whisk occasionally. When at desired consistency (about 30 minutes) maintain a low heat and add heavy cream. Stir. Add diced cheese and stir until fully melted. Dust shrimp with preferred blackening seasoning. Sear on medium heat for 90 seconds each side. Top grits with shrimp.
