Ingredients:
1/2 cup Onions small dice
1 tablespoon Garlic finely chopped
1.5 teaspoons Oregano Dry
1.5 teaspoons Rosemary dry and ground
1 teaspoon Kosher Salt
1/2 teaspoon Black pepper Ground
1/4 cup Olive Oil
1 pound Lamb or Pork thinly sliced
Tzatziki sauce ( Yield 1 3/4 C ):
1 cup Cucumber peeled, seeded and cut small dice
1 tablespoon Olive Oil
2 teaspoons Lemon juice fresh squeezed
2 teaspoons Fresh Dill finely chopped
7 Mint leaves finely chopped
2 clove Garlic finely chopped
8 ounce Greek yogurt or drained plain yogurt
Salt and Pepper To Taste
Service:
1 tablespoon Olive Oil
2 Warm Pitas
1 Tomato Sliced thin
1/2 Red Onion Sliced thin
Hot French Fries
Procedure:
Gyro Meat: Place the onions, garlic, oregano, rosemary, salt, pepper and Olive oil in a small bowl and mix well. Add the meat in and mix until the meat is covered with the oil mixture. Let set over night or at least a few hours.
Tzatziki sauce:
Place your cucumbers, olive oil, lemon juice, dill, mint, and garlic into a food processor. Process until fairly smooth, a few bumps are good. Place the mixture into a bowl and combine with the yogurt. Season To Taste with salt and pepper and let rest for at least an hour to let the flavors combine.
Cooking and Assembly:
Place the olive oil into a sautee pan and place over high heat. Add the Gyro meat and sautee, while constantly stirring, until the meat is cooked through, about five minutes. Divide the cooked meat between the two pitas. Garnish with the tomatoes and onions as desired, serve with Tzatziki sauce and hot French fries.
