One Tiny Cafe: Cheesy Broccoli Soup Recipe

12 c. water
10 tsp. good chicken soup base
3 c. milk
1/2-3/4 c. corn starch
1 bunch broccoli, chopped (crown only)
1 carrot, chopped fine
1/2 c. onion, chopped
1/2 c. celery, chopped
3-5 shakes pepper and garlic powder
8 slices Swiss cheese
8 slices American cheese

In a good soup pot, bring water and soup base to a boil. Add veggies, pepper and garlic powder boil for 5-7 minutes. Add chopped broccoli, then continue to boil 2-3 minutes longer. Turn heat down add 1/2-3/4 cup cornstarch with 1 cup of milk, stir until smooth and then stir into soup mixture. The soup should thicken in just a minute, stir well. Add Swiss and American cheese into soup and stir. Now add 2 more cups milk and stir. Soup is finished and yummy.
