Flavor Chefs: Individual Lemon and Passion Fruit Tarts with Raspberries Recipe

Total Cooking Time: 25 minutes

Ingredients:
2 ½ oz low-fat margarine
1/3 cup caster superfine sugar
2 eggs
2 Tbsp self-rising flour, sifted
¼ cup lemon juice
1 tsp grated lemon zest
1 passsion fruit, pulp removed
3 sheets filo pastry
4 ½ oz fresh raspberries

Procedure:
1. Preheat the oven to 350 F/ Gas 4. Beat the margarine and sugar until light and creamy. Add the eggs one at a time, beating well after each addition
2. Add the flour, lemon juice, zest and passionfruit pulp and beat until well combined.

3. fold each sheet of filo pastry in half from the short end up. Fold again and cut in half. Carefully line six ½ cup muffin holes with a piece of pastry. Pour in the lemon mixture and bake for 20-25 minutes, or until set. Serve topped with the fresh raspberries and, if desired, whipped light cream.
