Parma Ham, Mozzarella, Nectarine, Lamb's Lettuce and Mint Salad


Serves 4 persons as starter

Ingredients:
8 Parma Ham (slices)
1 Mozzarella ball
2 Nectarines
1 box Lamb's Lettuce (100-200g)
5 Mint leaves

Vinaigrette:
25ml Sherry Vinegar
120ml Olive Oil
1/2 Lemon Juice

Procedure:
Make your vinaigrette by mixing all the ingredients together in a bowl and season with salt and pepper. Start to prepare the different ingredients in the salad. Tear the mozzarella into rough pieces of roughly the same size. Slice the nectarines into even pieces removing the stones. Thoroughly wash the lamb's lettuce making sure there isn't any grit and remove the root on the bottom of the leaves making sure not to separate all the leaves. Finely slice your mint leaves. Once all the ingredients are prepared you can start to arrange the salad. Start by dressing the lamb's lettuce, mozzarella and nectarine in a bowl. Season with pepper and the mint and make sure all the leaves are coated in the dressing but don't overdress the salad otherwise it will wilt and die. Separate between 4 plates making sure all portions are equal. Place 2 slices of Parma ham over each salad and finish the plate with a little splash of vinaigrette around the salad.
