Chef Monica Pope: Lacquered Duck Leg Recipe

Ingredients:
Lacquer:
3 cups Sherry vinegar
1 ½ cups vanilla extract
1 cup Wholesome Sweeteners Fair Trade Organic Sugar

Ingredients:
Duck Leg:
1 duck leg per person

Directions:
To make the lacquer, combine all ingredients in a pot on the stove and reduce at medium heat until a syrupy glaze.

Heat the duck legs in 350 degree oven until piping hot and skin is crisp.  Glaze duck legs with lacquer and serve.  Serve with bleu cheese and a small salad.
