Serves 8 persons
Ingredients:
250gr Dark Chocolate (60% coco)
250gr Unsalted Butter
110g Caster Sugar
6 Eggs
3 Egg Yolks
100gr Plain Flour
Chocolate Powder for dusting
Softened butter for moulds
Procedure:
Start by preparing your fondant moulds. Take some butter and soften it slightly in a warm place. Place your fondant moulds on a tray and proceed to butter the moulds with the softened butter. Once coated take some chocolate powder and dust the inside of the buttered moulds making sure you evenly spread the powder. Place to one side. Place the butter and chocolate together in bowl and cover with cling film and place over a simmering pan of water to allow the ingredients to melt.
While your chocolate and butter melt place the eggs, yolks and sugar in a food mixer and mix for 4-5 minutes until the ingredients reach a fluffy consistency. Keep the mixer going and slowly add the melted chocolate and butter till all the ingredients are well introduced to each other. Remove the bowl from the mixer and proceed to sieve your flour into the mix using a spatula to mix gently. You don’t want to over mix at this point as you want to keep the mix light and aerated.
Now evenly place you mix into the moulds and cook in a 200 degrees oven for 7-10 mins. Keep an eye on them.
