Makes 8 servings.
Ingredients:
3 to 4 pounds. 8-rib rack of Niman Ranch pork, frenched
1 Tbsp. fresh thyme, chopped
1 Tbsp. fresh marjoram, chopped
1 Tbsp. fresh sage, chopped
Salt and pepper to taste
Instructions:
Generously salt pork, then season with pepper and herbs. Bring pork to room temperature. Make a charcoal fire, preferably with mesquite. Bring fire temperature to 350 to 375 degrees. When coals are white, place pork on the grill; cover and cook until internal temperature reaches 145 to 150 degrees.
Be careful to avoid flair-ups, as this will impart a burnt and bitter taste. Remove pork from the grill; let rest at room temperature 10 to 15 minutes. Slice individual chops.
Serving suggestion: Serve with grilled vegetables and garlic-roasted potatoes.
