Tarragon Pesto
Yields: 1¼ cups
Chef's Notes:
Tarragon makes an aromatic, versatile pesto. You can add a little cream to it and serve the sauce over fresh pasta. Or use the pesto as a base for fish sauces and salad dressings. French tarragon is far more flavorful than other varieties.
Ingredients:
½ cup loosely packed fresh tarragon leaves
1½ cups loosely packed fresh flat-leaf parsley
2 large cloves garlic
Scant ½ cup freshly grated Parmesan cheese
½ cup pine nuts
½ cup olive oil
Salt and freshly ground black pepper
Procedure:
Combine the tarragon, parsley garlic, cheese, and pine nuts in a food processor or blender. Process to mix. With the machine running, slowly add the oil. Season to taste with salt and pepper and process to the desired consistency Let stand for 5 minutes before serving.
