Vermilion: Spicy Grilled King Prawn Salad with Chilli Paste Recipe

Ingredients:
16 King prawns,shelled and deveined with head on (4 per person)
4 stalks lemongrass, finely sliced
5 kaffir lime leaves, finely sliced
7 shallots, finely sliced
14 mint leaves, chopped
Dressing:
2 tbsp palm sugar
2 tbsp fish sauce
2 tbsp tamarind juice
2 tbsp lemon juice
2 tbsp nam prik pao
1½ tsp chilli powder
Garnish:
3 dried small chillies, deep-fried
6 mint leaves.
1 tbsp roasted coconut
Procedure:
Mix together in a bowl chilli powder, nam prik pao, palm sugar, fish sauce and tamarind juice and lemon juice. Add the remaining ingredients – lemongrass, kaffir lime leaves shallot, and mint leaves. Toss slightly to make the salad dressing. Steam the prawns over boiling water for 1 minute. Arrange the prawns in a serving dish and top with salad dressing. Garnish with roasted coconut, chillies and mint.
