Chef Notes:
This lemon chile marinade is mildly spicy with a nice lemon zing to it. It's great on beef, chicken and fish as well as grilled vegetables.
Ingredients:
juice of 3 lemons
3 jalapeños (other chiles can be substituted)
zest of 1 lemon (zest prior to juicing)
10 garlic cloves
1 cup olive oil
Procedure:
Seed and rough chop jalapeños.
Place everything in blender, and blend till smooth.
Use only what is needed and save the rest in the cooler for next time. after pouring marinade over meat, Massage meat briefly to ensure proper coating.
Let sit for at least 1 hour or up to 24 hours. Depending on the size of meat. Drain of excess marinade prior to cooking. Season meat with salt and pepper prior to cooking.
