Eataly: Porchetta Rub Seasoning Recipe

Eataly's Porchetta Rub Seasoning Ingredients:
2 tablespoons fennel seeds
2 tablespoons kosher salt
2 tablespoons freshly ground black pepper
2 tablespoons sugar
Garlic Paste Ingredients:
6 cloves garlic, thinly sliced
½ cup extra virgin olive oil
Procedure:
Combine all ingredients together for the Rub and mix thoroughly. This can be stored for up to 3 months in a covered container. Place the garlic and olive oil together in a blender and blend into a paste.
