Bluefin Grille: Warm Cinnamon Fudge Cake - Chef Ed Douglass

Ingredients:
2 cups flour
2 cups sugar
½pound unsalted butter
4 tbsp dark baking cocoa
1 cup water
2 eggs
1½ tbsp baking powder
1 tsp pure vanilla extract
1 tsp ground cinnamon

Procedure:
Sift all dry ingredients together and set aside. Melt butter and water together and allow to cool.
Beat eggs and vanilla to a light froth then blend all ingredients together well. Pour batter into a
greased 7 by 11 inch Pyrex pan and place in a 360 degree oven for 25 minutes or until a tooth
pick comes out clean.
Allow to cool for 90 min. before frosting.
Serving:
Cut cake to desired size, warm in microwave for 45 seconds and serve with your favorite ice
cream.
