Chile-Lime Sauce Ingredients:
1 C Sugar
1 C Water
1 C Chile paste
5 each Limes, juice of
1/4 C Fish sauce (optional)
Chile-Lime Sauce Procedure:
Combine the sugar and water in a heavy gauge saucepot and place over medium-high heat. Bring to a boil and boil for 5 minutes. Remove from heat and pour syrup into a medium sized mixing bowl to cool completely. Add chile paste, lime juice and fish sauce (if using) and whisk to combine. Reserve.
