Celebrity Cruises: JVS Signature Mozzarella Meatball Recipe



Serves: 6

Ingredients:
Meatballs Ingredients:
1 small white onion (diced small)
1 shallot (diced small)
1 ounce celery (diced small)
3 garlic cloves (finely chopped)
2 tablespoons unsalted butter
1 pound beef (ground, no casing)
4 ounces Italian sausage (ground, no casing)
4 ounces pork (ground only one time)
3 ounces turkey (ground only one time)
1 teaspoon fresh parsley (chopped)
1 teaspoon fresh oregano leaves (chopped)
1 teaspoon fresh sage leaves (chopped)
2 large whole eggs
To taste kosher salt
To taste black pepper (ground)
1 tablespoon Parmesan cheese (grated)
1 tablespoon panko bread crumbs
1 ounce ketchup
1/2 cup whole milk
1½ cups baguette bread (cubed and dried)
18 buffalo mozzarella bocconcini
As needed oil for deep frying

Pasta Ingredients:
2 pound linguine pasta (cooked al dante)
To taste kosher salt
To taste white pepper (ground)

Garnish Ingredients:
1 cup Parmesan cheese (shaved)
6 fresh basil leaves (fried)

Procedure:
Mozzarella Meatballs Method:
To make the meatballs, sauté the onions, shallots, celery and garlic in the butter until soft, then let coo. Blend all the meats together in a mixing bowl. Add all remaining meatball ingredients except the mozzarella cheese, milk, bread and oil. In a separate mixing bowl, add the milk to the bread a little at a time until it cannot absorb any more liquid. Delicately incorporate the bread soaked in milk into the meat mixture. Shape meatballs with a 4-ounce ice cream scoop and place 1 mozzarella cheese cube inside each ball. In oil heated to 375 degrees Fahrenheit, deep fry the meatballs until only half cooked. Finish cooking the meatballs in the marinara sauce.

Pasta Method:
Toss cooked pasta with heated marinara sauce. Add salt and pepper to taste.

To serve:
Place 4 ounces of pasta tossed with marinara sauce in the center of the plate. Top with 3 meatballs. Decorate plate with Parmesan cheese and fried basil.
