Cream Cheese Filling Ingredients:
12 ounces cream cheese, at room temperature
2 ounces fines herbs
1/4 cup Italian parsley (chopped)
1/4 cup curly parsley (chopped)
1/4 cup chives (chopped)
1/4 cup tarragon (chopped)
1 tablespoon fresh thyme (leaves picked)
2 ounces heavy whipped cream
1 teaspoon fresh lemon juice
To taste kosher sale
To taste white pepper (ground)
Salmon:
18 slices smoked salmon (sliced)
Cucumber Salad:
1 Pound European Cucumber (pealed and sliced)
1 red onion (finely sliced)
18 celery leaved (yellow)
10 fresh chervil springs (picked)
10 fresh basil leaves (chiffonade)
4 ounce frisee lettuce (chopped)
Finishing:
18 bagel slices (toasted)
6 teaspoons sour cream
6 teaspoons salmon roe
Procedure:
Mix the cream cheese, 1/2 of the fines herbs and cream until soft and smooth. Add the lemon juice, salt and pepper to taste.
Arrange the smoked salmon on plastic wrap. Spread the filling across the salmon, and roll to form a roulade. Wrap in plastic. Refrigerate overnight. Unwrap; roll into other half of fines herbs. Slice 1/2-inch thick.
For the cucumber salad, mix all the ingredients together gently and set aside. Place 3 slices of salmon roll on a serving plate. Add a dome of cucumber salad in the middle and 3 broken pieces of toasted bagel. Place sour cream in pastry bag with tip. Pipe 3 points of sour cream on plate and top with salon roe.
