13-Minute French Onion Soup - Chef David Maish


Makes: 4 cups

Hand Chopper Ingredients:
1 large onion peeled
2 cloves garlic

Other Ingredients:
Vegetable oil
3 cups hot water
1/4 teaspoon Home Seasoning Mix (See Below)
1 tablespoon beef base
1 teaspoon sugar
1/2 cup sweet sherry

Home Seasoning Mix Ingredients:
2 tablespoons salt
1/4 teaspoon white pepper
1/4 teaspoon granulated garlic
1/4 teaspoon ground thyme
1/4 teaspoon onion salt

Thickening Ingredients:
Cornstarch
Cool water

Topping Ingredients:
4 slices provolone cheese
French bread sliced for toasting

Procedure:
STEP 1: Start a 10-inch frying pan over high heat with a splash of vegetable oil; begin slicing the onion into thin pieces, and place in hot oil. This will take 9 minutes to fully brown, so start getting everything else ready to go in a sauce pan.

STEP 2: Start the 3 cups of hot water on the stove and bring to a boil, and add all of the "other ingredients" to the boiling water except the sherry. Start toasting the French bread while continuing to stir the onions every few minutes. After the onions are browned, add sherry with the flame off. Let it sit for 15 seconds, and add the boiling water mixture to the frying pan.

STEP 3: Once the soup is boiling, add the corn starch and cool water mixture to the boiling soup until it reaches the desired thickness. Pour into soup cups, place the French bread on top with favorite cheese and place in a toaster oven. Remember the cups will be hot when taken out!
