Notes:
The Lemon Parmesan Sole is a signature dish at Wildfish Seafood Grille
Ingredients:
8 oz. sole filet
3 oz. of marinated red and gold tomatoes, tossed with balsamic vinegar, chives, basil, and olive oil
2 oz. of garlic butter sauce
2 teaspoons of grated parmesan
Several sprigs of parsley
Procedure:
1.Season sole with salt and pepper, dip in flour, then milk and then Parmesan crumbs
2.Saute filet side down first, until golden brown and very crisp
3.Turn, and saute other side until golden brown and very crisp
4.Remove from skillet and sprinkle grated Parmesan cheese and broil to melt cheese
5.Place the tomato mixture in the center of the fish
6.Garnish with lemon garlic butter, parsley sprig and chopped parsley
