Notes:
This dressing can be used as a salad dressing, dip, on sandwiches. It is very thick and chunky. You can increase the amount of cheese up to a full pound. It will keep in the refrigerator for 10 to 14 days.
Ingredients:
1/2 lb maytag blue or roquefort cheese
16 ounces mayonnaise
1/2 cup milk
1/4 cup wine vinegar
2 tbsp fresh lemon juice
1/8 tsp salt
1 tbsp sugar
Worcestershire sauce to taste
1 clove garlic, minced
1/4 small onion, finely minced
Procedure:
1. Coarsely crumble the cheese.
2. Combine all of the other ingredients in a bowl.Add the crumbled cheese and blend gently.
3. Adjust taste with Worcestershire Sauce.
4. Refrigerate for at least several hours to allow flavors to blend.
