Pio Pio Peruvian Restaurant: Salsa Verde Recipe


Ingredients for Large Batch:
1 Hass Avocado (additional avocado to adjust for thickness and creaminess)
8 Medium Tomatillos
1 Jalapeno
2 Tbsp Fresh White Onion
2 Tbsp Fresh Cilantro
1 Clove Garlic
1½ tsp Lime Juice
1½ tsp Salt

Ingredients for Small Batch:
1/2 Hass avocado (additional avocado to adjust for thickness and creaminess)
4 Medium Tomatillos
1/2 Jalapeno
1 Tbsp Fresh White Onion
1 Tbsp Fresh Cilantro
1/2 Clove Garlic
1/2 tsp + 1/4 tsp Lime Juice
1/2 tsp + 1/4 tsp Salt

Procedure:
Cut tomatillos into quarters. Cut jalapeno in half and remove seeds. Chop onion, garlic, and cilantro.
Place tomatillos, jalapeno, onion, garlic, and cilantro into food processor and puree.
Add avocado into mixture and pulse just enough to create an even texture. Add lime and salt to mixture. Pulse quickly one last time.

Note:
The tomatillos, onions, and lime juice are the ingredients that makes the salsa thinner.
The avocado makes the salsa thicker and more creamy.
Increase the amount of jalapeno if you want the salsa hotter.
This salsa is great with roasted chicken.
