Capital Grille: Seared Halibut with Sweet and Sour Tomatoes Recipe

Serves: 4

Ingredients:
4 Halibut Fillet, 9-1/2 oz each
Kosher Salt to taste
Freshly Ground Black Pepper to taste
2 oz Clarified Butter
3 oz White Wine
3 oz Sweet and Sour Tomatoes   Recipe >>
4 Sprigs Chervil
4 tsp Sliced Chives

Procedure:
1. Preheat oven to 400° F.
2. Season the halibut with kosher salt and freshly ground black pepper.
3. Place the clarified butter in a preheated frying pan and heat until wisps of smoke appear. Sear the flesh side of the fish for 5 minutes (the fish should be golden brown and very crisp).
4. Flip the fish and cook it on the skin side for 3 minutes.
5. Place the fish in a baking pan, add the wine, and set pan in the oven to finish cooking.
6. If the fish is thin (less than 1” thick) it will finish cooking in 2-3 minutes. A thicker piece may take 5-6 minutes. Be careful not to overcook the fish.
7. Test the fish’s doneness by inserting a bamboo skewer or toothpick. The fish is done when you can insert it with little resistance.
8. Place the fish in the center of a serving plate.
9. Top the fish with the tomatoes and allow some of the tomatoes to scatter around the fish.
10. Garnish with chervil and sprinkle with chives.
